halloween must be close

There has been a plastic pumpkin cauldron of bite-sized candy bars sitting on my desk at work this past week and I am proud to say that I have not indulged.  Not once.  Then the weekend hit and my sweet tooth started to feel neglected.  So this lazy pre-Halloween weekend, I sequestered myself in the kitchen and made a couple of things I’m pretty proud of.

To go along with my dinner of wild mushroom risotto, I made a vegetarian vanilla and maple syrup panna cotta, substituting the traditional gelatin with pectin.

The vanilla bean gave it a grainy look, but the texture and taste were as creamy and smooth as Lando Calrissian.

This morning I woke up early and had a hankering for scones which, admittedly, I NEVER do.  I broke out the bag of frozen blueberries, floured down my butcher block , and made a half-batch of damn good biscuits.

The recipe called for heavy cream instead of a combination of butter and milk, which I think accounted for the tops not browning as usual.

Later this afternoon, I’m thinking chocolate caramel corn.
