Today I received my shipment of “real wasabi.” As you may know, the wasabi you get at most restaurants is not wasabi at all. Even the kind you buy in the toothpaste tube at the store, isn’t the real deal. Just look at the ingredients – horseradish and mustard. No wasabi to be found. While wasabi is a type of horseradish, it’s got to be wasabia japonica to be true. So in my search for an experimental recipe of wasabi chocolate covered candied ginger, I found the real deal at realwasabi.com.

Granted, I wasn’t about to fork over $45 for a half pound of fresh wasabi (though I’m sure it’s worth it in the long run), I did purchase a canister of dried wasabi. We’ll see how it goes.
